At the outlet of the Gorges de la Nesque (C.D 942) or Col de la Gabelle (C.D.1), discover SAULT. It is characterized by its lines of trees, brooks and numerous beehives waiting to be filled with honey. In summer, the blue lavender colour is so intense that it will almost blind you.

The colours are incredibly intense, the sky a fabulous blue against the golden wheat fields and stunning colour of the lavender plants. The mix, amongst the poignant smells in Provence, will leave you feeling positively light-headed.
The perfume of lavender intermingles with the fragrance of spelt and wheat gorged with sun, the parched ground, and the golden everlasting flowers which persistantly push upwards on the slopes. An amazing combination of perfumes will take your breath away... a rare scent that cannot be found elsewhere.
The heat, from the baking sun, brings out the colours and perfumes of each and every plant, flower... intermingling and bringing one’s senses alive.
Only the truffle, hidden in the ground, keeps its delicious perfumes to itself.
From Aurel to Monieux and at the foot of Sault, the plain irresistibly evokes a heavenly garden, carefully maintained and bordered with forests which flower... wild hazel nuts, blackberries and bays, amongst a multitude of other wonders. Posed on a rocky outcrop, Sault is a village accustomed to hard and snowy winters. A beautiful esplanade where the pungent smell of lime trees mingles with the delightful hum of birdsongs and insects in the background.
